Swai Fillet

So you just got home from work and don’t have a lot of time to cook a full meal? No worries, the healthy frozen Swai fillets that you have stored in your freezer have you covered for today. You will be doing less work and enjoying a heavenly delicious meal with your family. It’s easy to put together and you’ll have fewer dishes to clean.

Give it a try; I promise you won’t regret it.

Ingredients:

4 pieces of boneless skinless Sawai fillets
1 small eggplant, sliced
1 cup of sliced mushrooms
2 cups of mixed frozen vegetables
¼ cup of melted butter
¼ cup of extra virgin olive oil
½ tsp garlic powder
½ tsp onion power
½ tsp oregano
½ tsp dried basil
½ tsp Italian seasoning
½ tsp Parsley

Directions:

Place the Swai fillets pieces in a large oven dish. Next, pour the butter and oil over the pieces of fish. Then, sprinkle the spices over everything. Add the sliced vegetables on top. Cover with foil and bake on 400 degrees for 45 minutes or until fish is thoroughly cooked.

400F for 45 Minutes.

Moroccan Chicken Thighs

It is no surprise that Moroccan cuisine is one of the best and most complicated in the world; with its Mediterranean flavors, charming & exotic spices, it is just heavenly! But don’t let that fool you; this recipe is for everyone to make despite your current location. The ingredients are available at your local grocery store.

Ingredients:

8 chicken thighs
1 cup of sliced mushrooms
1 cup of sliced tomatoes
3 medium size sliced potatoes
½ sliced onion
½ tsp garlic powder
½ tsp Italian seasoning
½ tsp parsley
½ tsp basil
½ tsp oregano
1 tbsp butter
1 tbsp olive oil

Directions:

In a large glass oven dish put the chicken thighs nicely separated from each other so the other ingredients can get through and around them. Put butter in the middle and pour the olive oil over the thighs. Add the sliced potatoes, tomatoes, mushrooms and onions all around. Add all the spices (there is no preferable order of which spice goes first). Cover with aluminum foil, stick it in the oven and cook at 380F for about 45 minutes or when the chicken is done. Some like the chicken done differently so it’s up to you the cooking time. Serve warm. Enjoy!
