Egg and veggie Frittata

Ingredients:

1 lb ricotta

1 Cup Parmesan cheese

1 Medium zucchini, cubed

1 lb fresh spinach

4 beaten large eggs

1/4 cup fresh parsley, chopped

2 garlic heads chopped finely

salt and pepper to taste

Directions:

Preheat the oven to 380°F. In a large mixing bowl, combine all ingredients and mix thoroughly; spray a medium size pan with Pam and pour mixture into it. Bake for 25 minutes or until bubbly. Let cool 15 minutes before serving.

Serve on a toasted English muffins or sliced French bread with a thin cut slices of sweet red onions. Enjoy!
