Steamed Mussels With Garlic and Wine

Ingredients:

2 1/2 lb mussels, scrubbed, washed and cleaned thoroughly

1/4 cup fresh parsley chopped

1 cup dry white wine

5 cloves of garlic, chopped finely

3 tbsp extra virgin olive oil

1 tbsp lemon juice

Directions:

Place washed mussels in a large pan with a cover; add parsley, garlic, wine and lemon juice all together. Mix gently with a wood spoon (preferably) until all mussels are coated with the rest of the ingredients. Pour olive oil over the mussels and cover. Heat to a boil, reduce heat and steam for 10 minutes. Enjoy!

The remaining juice of mussels is amazing to use on a piece of toast, french or Italian bread and sprinkled with some Parmesan cheese.
