Years ago, a guy I met introduced me to a wonderful salad. It’s so simple, healthy, and delicious! Spinach is a nutritional powerhouse – it packs vitamins and minerals (including plenty of iron) into a very low calorie package. It also has protein and fiber. Mushrooms are also a good low calorie source of vitamins and minerals. Eggs have protein, iron, vitamins, and minerals. They really work well together. The taste and nutrition are both amazing. The dressing adds a perfect touch.
Salad:
Fresh raw spinach
Fresh raw mushrooms
2 – 4 eggs
Dressing:
2 tsp. onion
¼ tsp. salt
½ tsp. pepper
2 Tbsp prepared yellow mustard
2 Tbsp. vinegar
1-1/2 cup oil
½ tsp. lemon juice
Wash the spinach and mushrooms, and set aside to dry.
Put the eggs on to boil.
Prepare the dressing. First, grate or mince onion until you have 2 teaspoons of it.
Next, combine the onion with the salt, pepper, mustard, vinegar, oil, and lemon juice. Mix well.
Arrange spinach in a bowl, ripping into bite sized pieces.
Slice the mushrooms and add to the spinach.
Once hard boiled, peel the eggs. Slice and place on top of the salad. Top with some of the dressing.
