Ingredients
4 – 6 wood chunks or 3 to 4 cups wood chips (cherry or apple)
4 teaspoons granulated sugar
4 teaspoons packed brown sugar
2 teaspoons salt
1 teaspoon dried minced onion
1 teaspoon dried minced garlic
1/2 teaspoon ground white pepper
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon chili powder
1 tablespoon packed brown sugar
3 – 4 pounds pork loin back ribs or pork spare ribs
1/2 cup desired barbecue sauce
Directions
- If you are cooking on smoke, then soak wood chunks at least one hour before in water. Soak wood chips in the same way if you are using grill method.
- Take a bowl and mix granulated sugar, 4 teaspoons brown sugar, salt, onion, garlic, ground white pepper, ground black pepper, cumin, paprika and chili powder.
- Keep 2 tbsp of mixture set aside and put it in another bowl.
- Sprinkle remaining rub on both sides of ribs. Rub mixture into ribs.
- Add 1 tbsp brown sugar into reserved mixture. Set aside.
Smoker Method:
- Drain wood chunks.
- Put preheated coals in smoker along with water and drained wood chunks.
- Place ribs on grill rack on water pan.
- Cover and smoke for 3 – 4 hours.
- When last 15 minutes are left, sprinkle reserved brown sugar mixture onto ribs.
- Brush with barbeque sauce when it is about to be cooked completely.
Grill Method:
- Drain wood chips.
- In a grill put pre heated coals around pan.
- Place ribs on grill rack and cover. Cook for 1 ¼ to 1 ¾ hours.
- When last 15 minutes are left, sprinkle reserved brown sugar mixture onto ribs.
- Brush with barbeque sauce when it is about to be cooked completely.
