Ingredients:
1 lb fresh mozzarella cheese
14 ounces roasted red peppers
1 medium red onion
2 ribs celery
30 ounce marinated artichoke hearts drained
2 tablespoons balsamic vinegar
1 cup fresh parsley leaves
Salt and pepper to taste
Directions:
Combine all ingredients: cheese, artichoke hearts, roasted peppers, onion, celery, vinegar, and parsley in a large bowl; toss to mix. refrigerate until ready to serve. Let come to room temperature. use salt and pepper to taste. Enjoy!
