This Banana Walnut Bread is amazing! Not only that it contains neuroprotective compounds, including vitamin E, folate, melatonin, omega-3 fats, and antioxidants but is also very healthy for you. Great way to use overripe bananas that contain a fair amount of fiber, as well as several antioxidants as well. Hope you enjoy it!

Ingredients:

1 ¼ Cups of walnuts
1 ¾ Cups of all-purpose flower
1 Teaspoon baking soda
½ Teaspoon salt
2 Large eggs
1 ½ Cups sugar
3 to 4 ripe bananas
¼ Cup of vegetable oil
¼ Cup of butter milk
½ Teaspoon nutmeg
½ Teaspoon cinnamon

Directions:

1) Heat oven to 350°F. Grease and add flour to a non stick pan and set aside.
2) Combine all ingredients and beat at a medium speed and make sure everything is mixed well together.
3) Bake for 45 minutes or until toothpick inserted in center comes out dry and clean. (You might have to cook more than 45 minutes.
4) Serve with Butter, jam or your favorite dessert.
