This is an amazing recipe that everyone should try! My wife and I made it at home and it was so tasty that we ended up making more. If you are having family, friends or co-workers over for dinner, make sure to cook Vichyssoise Soup for them! It’s easy to make and I’m pretty certain everyone will love it!
Ingredients:
4 tablespoons butter
6 leeks: remove the green parts, rinse well to remove sand, then slice into small pieces (it doesn’t really matter how small the pieces are since you will be using the blender later on, but you want them to cook faster)
2 potatoes, diced – approximately 2 cups (I like to keep the peels on my potatoes but feel free to remove them)
3 tsps chicken bouillon
3 cups of water
1/2 tsp salt
1/2 tsp ground black pepper
a dash of nutmeg
2 cups heavy whipping cream or sour cream
Chives cut into small pieces for garnish (chive flowers, too, if you can get them)
Directions:
Melt the butter on medium heat in a pan. Add the leeks and cook for about five minutes. Add the potatoes, chicken bouillon, water, salt, pepper, and nutmeg, and turn to high until it boils. Turn to low and simmer until potatoes are tender.
Put half of the mixture into a blender. Add 1 cup heavy whipping cream and blend until smooth. Put into a large pot, then blend the other half with the other cup of whipping cream and add to the pot.
Serve warm, or chill. Sprinkle with chives before serving. Some people like Vichyssoise Soup cold (it’s traditionally served cold), but I don’t! I hope you get to try it! Please free to like, share and comment and let me know how it turned out! I can’t wait to hear about it…
