So you invited some friends over and you’re still puzzled about what to cook for them? Well, this amazing and quick shrimp scampi is perfect over pasta! You can also use it with other type of noodles. For example, pair it with shirataki noodles if you are concerned about carbs. With its zesty taste and buttery flavor, this shrimp scampi recipe will leave your guests speechless. It can serve up to 4 people. Don’t forget to serve the veggies as well!! 🙂
Ingredients:
The Shrimp:
1 lb shrimp
1 cup olive oil
Pinch of salt
Pinch black pepper
¼ cup unsalted butter
1 tsp garlic powder
1 tsp lemon juice
1 tsp dry parsley
1 tsp Italian seasoning
1 tsp dry basil
½ cup bread crumbs
The Pasta:
Cook one pack of pasta over medium heat until done and drain from water in a strainer; mix 1 tbsp of butter with the pasta while still hot so it does not stick together and also to give it a buttery flavor!
Directions:
Put the oil and butter in a pan and cook over medium heat until the butter is melted then add the raw shrimp, pinch of salt, pinch of pepper and continue to cook over medium heat. After the shrimp starts to get pink add: lemon juice, garlic powder, dry basil, Italian seasoning and mix everything while cooking! When the shrimp is almost done, add bread crumbs and mix everything and cook for another 2 to 3 minutes. Serve warm!
