Ingredients
4 tilapia fillets (6-8 oz each)
Salt and pepper to taste
1 teaspoon fresh garlic, minced
1 tomato, chopped
1/2 cup chicken broth
1 lemon
Sauce:
1 large shallot, finely minced
1 clove garlic, finely minced
1/2 cup chicken broth
1/2 teaspoon turmeric
1 tablespoon fresh basil
Salt and pepper to taste
1/2 cup nonfat sour cream
Directions
Place fillets in a single layer in a baking dish. Season with salt and pepper. Divide the tomato and dice evenly over the fillets.
- Pre heat oven at 400 F
- Take a baking dish and arrange fillets in it. Season.
- Divide tomato and dice in an even manner over fillets.
- Sprinkle broth and lemon juice.
- Cover the baking dish and bake for 10-15 minutes.
- Meanwhile, take a sauce pan on medium heat and mix shallot, garlic, chicken broth and turmeric.
- Add basil and seasoning and reduce heat to low.
- Stir in whisk cream. Serve fillets with this sauce
Sprinkle the fillets with chicken broth and freshly squeezed lemon juice. Cover the pan and bake in a preheated 400° oven for about 10-15 minutes, or until fish flakes easily. While fish is cooking, combine shallot, garlic, chicken broth and turmeric in a sauce pan.
Over medium heat, reduce by half. Add basil and seasonings; reduce heat to low. Whisk in the sour cream.
