Spending time with your family is priceless and cooking together is one of the most interesting activities. It is a way you can get closer and talk about things that have happened to you during the last few days.

My family and I are big fans of salads and I have decided to share some of our family recipes with you. Remember that it is healthy, easy to make and that’s exactly what you need if you want to make a fresh start.

However, when you use a raw leek, especially in salads, you should know that it should be the main ingredient because of its distinctive taste. I highly recommend this salad combined with red meats. It would make the perfect combination.

Leeks are a close relative to garlic and onion and belongs to the Amaryllidaceae family. It is extremely healthy and has high concentrations of vitamins and minerals such as A, B6, B9, C, E, K, calcium, iron and magnesium.

And reading about it on the web, I found some very interesting facts. The most interesting was that the leek is one of the national emblems of Wales. According to one legend, King Cadwaladr of Gwynedd ordered his soldiers to identify themselves by wearing the vegetable on their helmets in an ancient battle against the Saxons that actually took place in a leek field.

However enough with facts, let’s get back to our salad. It’s really easy to make and it takes only 10 minutes. You’ll need a couple of leek bulbs, (depending on the quantity you want to make), one lemon, some olives, olive oil, salt and pepper. Cut the leek into small pieces, squeeze some fresh lemon, add salt and pepper, some olives and olive oil on top. And that’s it.

You can try this salad and invite your friends to taste it together. I also want to share another great recipe that my mother and I have prepared for you. Let’s see what it is all about.

I decided to prepare steamed vegetables in case any of you are vegan. I think about all of you so don’t worry if the first recipe wasn’t proper for your daily meals.

Ingredients:

– One beetroot
– 2-3 bell peppers
– 1 zucchini
– 1-2 carrots
– 1 onion
– 1 avocado
– 4-5 cherry tomatoes
– 2-3 garlic cloves
– Coarse sea salt
– Olive oil

Preparation:

1. Cut the ingredients into large pieces. Add a small cup of water in the dry cooking pan* and bring to boiling.

2. Lower the heat and place the zucchini, onions, carrots and the beetroot, and cook them about 10 minutes.

3. Add the garlic and bell peppers and continue cooking for 5 more minutes.

4. After 15 minutes, put the pan aside, and without opening the lid leave the vegetables for 5-10 minutes to soften.

5. Put the steamed vegetables into a serving bowl and add the avocado and the cherry tomatoes.

6. Add salt and oil. Add other spices if preferred.

  1. I love Family time with my family! And cooking together is so much fun. Not only can we talk & spend quality time with one another. BUT we can also try new recipes & learn from them. And our own touch! I just hope when my kids get older we can continue to have family time! Its important to me.
