Ingredients
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
Directions:
Preheat oven to 400 degrees.
Prepare muffin by putting in muffin liners or grease with shortening.
Mix the dry ingredients (flour, sugar, salt, and baking powder). Put oil and egg into a 1 cup measuring cup, and fill the rest of the way with milk. Add to the dry mixture, and mix well. Gently fold in the blueberries.
Make the crumb topping in a separate bowl: mix together sugar, 1/3 C flour, butter, and cinnamon. Combine with a fork.
Fill muffin tins to the top, and then sprinkle some of the crumb topping mix on each. Bake until a toothpick inserted into the center comes out clean, approximately 20 to 25 minutes.
