Ingredients

2 zucchini

1 tablespoon salt

2 eggs

1/2 cup ground almonds

1/2 cup grated Parmesan cheese

1/2 teaspoon dried Italian herb seasoning, or to taste

Directions

  1. Preheat oven at 425 F. Line baking sheet with parchment paper.
  2. Cut zucchini into around 3 inch length and then cut every piece into 9 fries.
  3. Sprinkle salt over fries and place fries into colander. Set aside for 1 hour.
  4. Take a bowl and beat eggs. In another bowl mix almonds, Parmesan cheese, and Italian seasoning.
  5. Rinse fries and pat dry with towels.
  6. Dip fries one by one in beaten eggs first and then coat on almond mixture.
  7. Place coated fries on lined baking sheet.
  8. Bake fries for 25 minutes.
