1 lb small baking potato
2 teaspoons extra virgin olive oil
1⁄2 teaspoon dried thyme
1⁄2 teaspoon dried rosemary
1⁄4 teaspoon salt
1⁄8 teaspoon fresh ground black pepper


  1. Take a skillet and melt butter on medium heat. Add mushrooms, shallots and seasoning.
  2. Cook for 10 minutes,
  3. Add chicken and again cook for 10 more minutes, on each side.
  4. Place chicken in serving plate and sprinkle some grated cheese over.
  5. Put mushrooms on top.
  6. Cook for 1 minute for melting cheese, before serving.
