I love mushrooms.  Not raw ones, although a small amount on a salad with dressing is ok.  I love sautéed mushrooms, mushrooms in soups, mushrooms in many recipes.  I tried marinated mushrooms, and loved those as well.  One day, I decided to try making my own.  I looked up how to online and used the information I found to make my own version.  It turns out it is very easy, and only takes a very short amount of time.

Simply boil the mushrooms in a pot of lightly salted water.  I used button mushrooms, but would be interested in trying another type in the future.  Estimate how many will fit in the jar(s) or other container(s) you will be using.  They only need to be boiled for around 3 – 5 minutes.  Then, drain them and place into the jar.

In a bowl, mix vinegar, oil, and whatever seasonings you would like.  Some suggestions are minced garlic, minced onion, dried oregano, parsley, peppercorns or ground black pepper, and a dash of salt.  Other suggestions are lemon (juice or slices), red pepper flakes, bay leaves, thyme, or Italian seasoning.  You can experiment with different types of vinegar and oil, too.  Once everything is mixed together, pour it over the mushrooms in the jar, cover it, and put into the refrigerator.

The mushrooms will be ready in as little as 8 hours, but the flavor can become richer after a few days.  I read you can leave them for up to five days.  If you don’t eat them all first, that is!

I even used the water to make vegetable soup afterwards!

A few days later, after enjoying the soup, I was able to try out the mushrooms on my salad.  Delicious!

They were so good I decided to make a second batch.  This time I added a few red bell pepper strips.  The mushrooms and peppers made a very tasty addition to my crisp salad.  This is a wonderful time of year for salads.  I’m having another one for lunch tomorrow, with more of my homemade marinated mushrooms!
