Ingredients:
4 oz. tomato sauce
1/2 onion, finely chopped
3 cloves garlic, peeled
1 tbsp cilantro
1 tbsp parsley
1/2 tsp ground black pepper
1 tsp bouillon (I prefer chicken)
1 potato, cubed
6 cups water
1 cup of lentils
Directions:
Mix all ingredients in a large saucepan on medium heat. Simmer for about 25 minutes. Stir every 5 to 10 minutes, and check if it needs more water. If so, add one cup at a time. When lentils are soft, serve and enjoy!
This goes well with a nice hot crusty French bread and a cool crisp salad. This is a very popular Mediterranean recipe.
