I recently published a recipe for ice cream cake. In it, I mentioned that you can make all of the ingredients that go into the cake. Many people have made cookies from scratch, and some have made cakes and frosting as well. Most people don’t want to bother making ice cream, but I found a quick and easy way to do it.

I’ve never had an ice cream maker, and never felt that it made sense for me to get one. I’m not sure how much they are, but I imagine they take up a bit of space. I do love ice cream, but doubt I’d ever make it often enough to justify buying an ice cream maker. I have made ice cream before, though. At first it was that difficult and messy method that involves salt, ice, and plastic bags. I always felt like I was going to end up getting a bunch of salt in my ice cream when I did that. It was just easier to go buy a container of ice cream, I thought. So I wondered, short of buying an ice cream maker or using salt, ice, and bags, is there any way to make homemade ice cream?

Then I found a quick and easy way online somewhere. The recipe is so simple! I don’t even need to have it in front of me. All you need is 2 cups of heavy cream and a 14 oz. can of sweetened condensed milk. Put the heavy cream in a bowl – to make it really easy and to cut down on dishes, put it in the container you plan to freeze and store it in. I have some plastic bowls with lids that work really well. Use a hand mixer to beat the cream until it forms stiff peaks. Now you’re almost done! Pour the sweetened condensed milk in and gently mix it in with a spatula, or use the beaters on low (my favorite way) just long enough to mix it all in. Put it in the freezer overnight, and that’s it!

I’ve tried mixing in so many different things for different flavors. That is done along with the sweetened condensed milk, or even right before putting it in the freezer. I recommend mixing things in very gently – more like ‘folding’ them in. The first thing to try is vanilla or some other flavoring. Then you can get more adventurous with things like chocolate syrup, berries, crushed fruit or cookies, or little pieces of candy. I’ve tried things like blueberries and cranberries. I’m sure you can think of even more interesting things. Get creative!
