Roasted Asparagus Salad with Feta Cheese


1 fresh asparagus, washed, trimmed and cut into small pieces
2 tbsp olive oil
1 pinch garlic powder
4 cups lettuce leaves washed and cut into small pieces
1 cup of grape tomatoes cut in halves
1/2 cup crumbled feta cheese


Preheat your oven to 400F/200ºC
In a large bowl, Place asparagus and mix with olive oil over asparagus and season with garlic powder. Mix very well.
Transfer asparagus to a baking sheet and bake in a 400F/200ºC preheated oven until asparagus become tender. Perhaps bake about 25 to 30 minutes. (Check at all times to make sure the asparagus is not well overcooked).
Place lettuce in the same bowl used for asparagus and top with tomatoes, feta cheese, and asparagus.
