2 tablespoons butter
4 cloves garlic, minced
1 cup chopped fresh flat-leaf parsley
2 slices bread, grilled
2 lemon wedges for garnish
1/2 teaspoon red pepper flakes, or to taste
1 zested lemon
2 cups white wine
Ground black pepper to taste
2 pounds mussels cleaned
Put the butter in a large pot, and melt on medium heat. Add the garlic and let cook for about 30 seconds. Add the red pepper flakes and lemon zest. Stir for about 45 seconds; then add the wing and black pepper.
Bring the sauce to a boil. Add the mussels, cover the pot; then let boil for one minute. Stir, cover again; let boil for two more minutes. Add the parsley and cook until all the shells open, approximately 1 to 3 minutes.
Serve with bread and lemon wedges.
