1 lb small baking potato
2 teaspoons extra virgin olive oil
1⁄2 teaspoon dried thyme
1⁄2 teaspoon dried rosemary
1⁄4 teaspoon salt
1⁄8 teaspoon fresh ground black pepper
- Take a skillet and melt butter on medium heat. Add mushrooms, shallots and seasoning.
- Cook for 10 minutes,
- Add chicken and again cook for 10 more minutes, on each side.
- Place chicken in serving plate and sprinkle some grated cheese over.
- Put mushrooms on top.
- Cook for 1 minute for melting cheese, before serving.
