1 slice enriched white bread
1/2 medium tomato, sliced
1 ounce sliced cheddar cheese
1 tablespoon non-fat liquid milk (1/2 fluid ounce)
salt & pepper to taste
Preheat oven to 400F. Toast bread on one side. Place toasted side up on a non-stick baking sheet. Cover toast with tomato slices, then place cheese slices on top. Separate egg. Mix with milk and season with salt and pepper. Beat egg white until stiff and then fold into yolk mixture. pile on top of cheese.
Place in hot oven and bake 10 minutes or until golden brown. Make 1 lunch serving.
